Fleur De Sel de Guérande is known as "the caviar of salts" and is accepted by many chefs as the best of all sea salts. The crystals form on the very top layer of the salt ponds and are harvested by barely skimming the surface. True "Fleur de Sel" can only originate from Guérande just as authentic champagne can only come from the Champagne region of France. Fumée de Sel (Chardonnay Oak Smoked - Fleur De Sel) is smoked from seasoned French oak wine barrels, which for years have been used in the aging of fine wines. The five to seven year old barrels are hand selected for wood smoking chips. The moist Fleur de Sel crystals readily absorb the natural smoked flavors of the oak and chardonnay. Tamise de Guérande is a small to medium grain sea salt that is found just below the Fleur de Sel layer. The mild flavor and soft crunch make it ideal for finishing or for topping breads, casseroles, roasts or fish. This is the most popular table salt amongst French salt farmers. Sel Gris de Guérande - Fine has a high mineral content which gives it a wonderful flavor as its naturally lower sodium content makes it much healthier than mined or refined salts. Neither treated or washed, it is totally natural and retains the light grey color characteristic of Guerande sea salt. Sel Gris de Guérande - Coarse has a unique color that makes this a truly beautiful salt. The grey hue comes from its extremely high level of minerals and nutrients. The soft, moist crystals will dissolve quickly and evenly when used in your favorite recipes. When used as a finishing salt, Sel Gris Coarse adds a nice crunch to your dishes. Velvet de Guérande is light gray in color and almost the consistency of flour. This is a very delicate crystal that has a "buttery" feel and taste as it melts on your tongue. This is a terrific salt to top any dish, its texture makes it ideal for snacks such as popcorn, sauces and salads.
